The superstitious nature of game day fans never ceases to surprise me.  Just looking at my friends, they have some of the quirkiest superstitions ever.

It includes wearing old hats, circling around the couch 3 times before sitting on it, or having the previous day newspaper in their lap while they watch the game.

They take their superstitions so seriously that they even go as far as blaming them when their favorite game doesn’t win.  It is never the players fault or the fact that the referee didn’t judge a play fairly.

No, their team lost because they washed their favorite hat the day before the game. If only they had waited to wash the hat after game day, their team would have won!

My favorite superstition was started (accidentally) by me.  I was hosting a few friends on a game day and I happen to run out chips and dip.  So, I make a run to Walmart to get more chips and dip.

When I return with these goodies, our favorite team scores a touchdown and the game gets really interesting.  Eventually, our team wins by a wide margin and everyone in the living room is jumping with joy.

That is how I started a new superstitious tradition on that day.  Now, when our favorite team is playing, the following events HAVE to take place in this exact order:

1) Rini hosts the game at her house for the same 5 friends

2) Rini buys 1 bag of plain chips (can’t be flavored) and only 1 Pace ® Picante Sauce bottle

3) The game begins

4) Exactly 40 minutes into the game, the chips are eaten up and the Pace ® Picante bottle is licked clean

5) Rini makes a mad dash to Walmart and buys exactly 2 bags of plain chips and 2 bottles of Pace ®picante (Mild) 24 0z. Rini cannot dillydally at Walmart or buy anything else.

6) Rini returns home with these 2 items in exactly 23 minutes

7) The favorite team wins the game and everyone lives happily ever after!

Whenever these rules are followed to the T, our favorite team has never lost. Even I have become a complete believer in these superstitions because the team never fails to win when we follow this ritual.  There is no other explanation for my favorite team winning each time.

In our home, we use Pace ® Picante bottles daily.  It goes into enchiladas, tacos, guacamole and everything else. It is the type of sauce that the whole family can love, including the pickiest eaters. With its genuine southwest flavors, it adds a kick to all my recipes.  You all know how much I love my spicy food! I can eat it for lunch, dinner and even breakfast.

I like eat adventurously and make creative recipes.  Today, I paired sweet potato and jalapeno with this Pace ® Picante sauce.  It is a sweet and spicy appetizer.

Potato and Jalapeno Appetizers

To Make The Stuffed Sweet Potatoes

1) Preheat oven to 500 degrees.  Take 9 baby sweet potatoes and wash them thoroughly.  Make a slit in the sweet potato lengthwise and place it on a piece of aluminum foil

2) Place 2 small slices of butter on the top of the butter.  Add a 1/4 tsp of chopped garlic and wrap the baby sweet potato.  Do the same for the remaining potatoes.  Place the wrapped potatoes on a baking tray

3) Place in the oven for 15 minutes.  Remove and let them cool

4) While the potatoes are in the oven, make the guacamole using pineapple juice.  Add 1/2 cup of salsa to the guacamole and mix well.  If you are using store bought guacamole, add the salsa to it and mix it.  Set aside

5) Place a medium pan on the stove and heat 2 tsp of oil on medium heat.  Add 1/2 cup of corn, 1/2 cup of chopped red pepper, 1 tsp of chopped jalapeno and 1/2 cup of chopped red onions.  Cook for about 5 minutes and then turn off heat

6) When the sweet potatoes have cooled, open each one and remove 3/4 of its pulp.  Place the pulp in a bowl and set it aside

7) Fill the sweet potato skins with guacamole.

8) Top with the corn mixture. Leave the rest of the corn mixture for the stuffed jalapeno

To Make The Stuffed Jalapeno

1) Cut 3 large jalapenos lengthwise.  Remove all the seeds from it.  Lightly brush with oil and place on a baking tray

2) Place the tray in a 500 degree preheated oven.  Roast the jalapeno for 7-10 minutes or until the jalapeno is browned. Remove from the oven and let it cool for a few minutes

3) Take the sweet potato pulp and add 1/2 cup of Pace ® Picante Mild Sauce.  Mix well

4) Stuff the cut jalapeno with the sweet potato mixture

5) Top with the corn mixture

Instructions
 

To Make The Stuffed Sweet Potatoes
