Buttered Radishes are the perfect keto snack recipe with a delicious peppery bite. It’s an easy recipe that is made with just 5 ingredients and takes just 30 minutes to make. You won’t miss potato chips!

If there was a bowl of radishes in front of me, I would eat the whole thing!

I have been obsessed with these radishes for a long time.  They are the perfect way to enjoy a low carb and keto snack! It’s also great for those who don’t like raw radishes.

Tips for making these radishes

  • Slice the red radishes lengthwise because they will roast evenly
  • Use thick, bulgy radishes for this recipe. I always get a bunch of radishes at my local grocery store or farmers market because they are fresher.
  • Make sure the radishes are firm to touch and maybe even a little unripe
  • Use a grass-fed, high quality butter to make these buttered radishes. I make sure it’s unsalted butter because you can control the salt content. I like to use very little salt to flavor any raw vegetables.
  • To get the best butter flavor use room temperature butter and use different herbs.

Why I love these radishes

They are packed with so much nutrition and they have so many holistic properties.   Their strong flavor makes them just right to be a side dish.

Baking them in the oven makes them juicy and tender.  It also takes away some of that strong flavor. 

Do you know how delicious basil and radishes taste?  It is like a little bit of heavenly flavor in your mouth.  The basil flavor lingers for a while which makes them so delicious.

Side note, this simple dish is great by itself, but you can also put them in salad greens, pastas, zucchini rolls, and sandwiches. Buttered radish is juicy and has a bite, so it will enhance any recipe.

Next time, try it on a fresh baguette with a fresh ricotta spread and you will love it!

Storing these buttered radishes

Using fresh radishes means that it won’t last long. Refrigerate the roasted radishes, if you have leftovers.

If you are using it in meal prep recipes, they should be used up within 2-3 days after you have made them. They will get a little slimy.

Types of butter

You can always use creamy butter to make these radishes. I love using fresh herbs like lemon balm or basil. My new favorite is scallion butter to roast these radishes.

Ingredients
  

  • 2 cups radishes See notes #1
  • 2 tsp butter See notes #2
  • 5 leaves Fresh Basil
  • 1 tsp Fresh Rosemary optional
  • ¼ tsp salt

Instructions
 

  • Preheat oven to 350°
  • In a bowl, mix all the ingredients. 
  • Spread them out on a baking tray
  • Bake them in the oven for about 15 minutes or until they are slightly brown. 
  • Remove from the oven and let them cool for a few minutes.
