This week, I am paying tribute to a very popular breakfast item.

TOAST…..

I love eating toast for Sunday brunch.  I have all kinds of toast recipes since the day I was born, but, nothing got my attention quite like this toast.

And it made with my very popular pina colada guacamole.  This guacamole recipe is so versatile because it goes for breakfast or lunch recipes.  It has even found its way into my vegan toastada recipe.

Instead of the regular toast recipes like butter and jam, I thought it would be a good idea to dress up the dull toast.

Gourmet toast is not a new concept and I think it is gaining in popularity.

I am always looking for breakfast ideas because I like eating breakfast for dinner.  If you are like me, this gourmet toast recipe will make you very happy

This pina colada guacomole on my avocado toast is perfect for a Sunday brunch.  Do you think I should serve this avocado toast with my vegan pancakes recipe?  I also have a fruity version of avocado on toast.  Its really delicious!

If you have fussy eaters in your family, this can be a great breakfast idea for kids.  Of course, make the pina colada guacamole without the alcohol.

I like topping this gourmet toast with capers because it gives the recipe a slight sourness.  It is the perfect compliment to the slight spiciness of the guacamole.

The next time I am looking healthy dinner recipes, this avocado toast will definitely be on top of the list.

I have slowly come to like avocado.  Before I started this blog, I had only had avocado two times in my life.  I find it too squishy, if that makes sense.

Ingredients
  

For the Guacamole

For the Toast

  • 4 Slices Toast
  • 1 Clove Garlic To rub on toast
  • 1 tsp Light Butter, Unsalted Melted
  • 1 Yellow Tomato Cut into long slices
  • 1 Plum Tomato Cut into long slices
  • 1 Avocado Cut into long slices
  • 1 Cup Cashews Unsalted, Halved
  • 1 tsp Black Pepper Freshly Ground
  • 1 tsp Oregano, Dried
  • 2 tsp Capers Or to taste

Instructions
 

  • To Prepare the toast
  • Toast the slices of bread in the toaster (well done)
  • Let it cool to touch then rub garlic over the toast
  • Butter the toast on one side of each toast
  • Spread a generous layer of the guacamole on the buttered side
  • Arrange the tomatoes and avocados alternately on top of the guacamole
  • Top with the pepper, oregano, cashews and capers
  • Serve Immediately

  1. Why does the avocado have to be from Mexico? I live in Hollywood 2 and a half hours away from Mexico. I have a wonderful avocado tree in my backyard one the pluses when I bought the house. Why would it be or taste different? I have bought plenty of avocados from Mexico at a local store before moving in this house. I was born and raised her we have a big Mexican community and my mom is Mexican so I’ve been around the food my whole life and, I have yet to taste the difference. I do see the difference on the skin by color and texture but don’t taste it.

    1. Thank you, Hollywood K. Avocado is appreciated no matter where it is from. You can use either avocado. Personally, I have always used Mexican avocado, so, that is what I know. However, I wouldn’t mind trying it with other avocados. Thank you for the suggestion. I bet you have a very beautiful avocado tree and would love to see pics of it.
