Simple Bread Salad Made Greek Style

For the bread
1
French bread
make sure it has sesame seed

extra virgin olive oil

tsp
parsley
dried
For the veggies

tomatoes
on the vine, cut into pieces
1/2
green bell pepper

extra virgin olive oil
1/2
tsp
salt

tsp
ground black pepper

garlic
(thinly sliced)

oregano

cup
red onions
bite sized pieces
1/4
cup
black olives
1/4
cup
manzanilla olives

balsamic vinegar
(optional)

capers
cilantro
Instructions
Preheat oven to 450 degrees
Cut bread into bite sized pieces and place them in a large bowl
Add extra virgin olive oil and dried parsley to it, mix well
Place the bread on a baking tray and put it in the oven.
Toast the bread until it is light brown (about 7 minutes). Remove set aside
Add tomatoes and bell pepper into the same bowl that had the bread
Add extra virgin olive oil, salt, black pepper, garlic and dried oregano
Place that mixture onto a baking tray and bake for about 15 minutes
Add red onions, black olives and manzanilla olives to the same bowl
Add the roasted veggies to the bowl along with all the roasting juices
Add balsamic vinegar, bread and mix well
Top with capers and cilantro
Serve immediately
Notes
Make this salad about 40 minutes before you are to serve it. This will ensure that the bread will remain crunchy
