For The Salad:

mini bagels
Toasted

baby spinach
thouroughly washed
¼
red onion
julienned

Campari tomatoes
chopped in cubes

cup
black olives
halved
½
cup
feta cheese

salt

Hummus
(Optional)
For The Dressing:

Extra Virgin Olive Oil

red wine vinegar

tsp
balsamic vinegar

orange juice

dried rosemary

freshly ground black pepper

dried oregano

cucumber
cut in cubes
Instructions
Dry the spinach on a paper towel and then place it in a large bowl
Add the onions and tomatoes
Add black olives, Feta cheese and salt to the bowl
In a separate bowl, add all the ingredients for the dressing
Whisk well and drizzle over the spinach salad
Use two wooden spoons to gently toss the salad
If you have hummus laying around, spread a very thin layer of it on the bagels
Top the bagels with the spinach salad
You can top each of the 8 bagels with the salad or top only 4 and use the rest as a cover, kind of like eating a burger
