You poured blood, sweat, and tears into your tomato garden. Now that your tomatoes (hopefully you grew campari tomatoes because they are my favorite!) are ready for picking, don’t just throw them into a salad and call it a day!
Here are 3 very compelling ways to taste them! Which one is your favorite?

1. Pasta Pomodoro

I used campari tomatoes to make this delicious angel hair pasta pomodoro! The delicate angel hair pasta pairs so well with the lightness and sweetness of Campari tomatoes.
This is an easy, one-pan dinner that uses basic pantry ingredients and is ready in just 30 minutes. It’s for back-to-school dinners or for those nights when you don’t have time, but want to put a delicious dinner on the table.
If you have time, you can add veggies like broccoli, zucchini, or mushrooms. For vegan protein, add these tofu crumbles.
2. Pickle Them

This has to be my favorite way to use up my garden Campari tomatoes (AKA tomatoes on the vine)! I can refrigerate them and enjoy them for a couple of weeks.
Pickling them is a simple process. I just add oil, vinegar, and carom seeds. This is enough to flavor them; however, I also add parsley, ginger, and red onions for added flavor.
The sweetness and mild flavors of campari pair so well with the strong flavors of carom and red onions. Together, these pickled tomatoes deliver a perfect balance of sweet and tangy flavors that are truly irresistible!

3. Caprese Tart

A Caprese sandwich is fine for those who don’t like to experiment. But I feel like you are the experimenting kind, and that’s why you are here. So, I thought I would give you something very unique to try!
This quirky caprese tart is a simple concept, yet the flavors are bold! I combined pesto, phyllo dough, mozzarella balls, and small tomatoes on the vine. This summer tart has become a favorite Sunday brunch recipe in my home.
The tart gets some sweetness from the grilled tomatoes. Top that with the strong bite from pesto, and you have a party for all your taste buds.
