Beets: What’s in a color?

Did you know that there are at least 17 different types of beets??? I had no idea. The only beets I have used are red beets and yellow beets (AKA Golden Beets)!

Find out when the beet season is for your favorite type and use them to make your own beet chips. I like to get min from the farmer’s market. The full list of types of beets can be found at Gardenerspath.com and they also show you how to grown your own beets.

🔺Size Tip: I use the smaller beets to make the chips. I find that the big beets (AKA Bull’s Blood) are harder to work with and take more time to cook.

Nutrition in beets

As part of the root vegetables family, beets are one of the most nutrition dense foods on the planet. If you don’t eat beets on the regular, here are good reasons for you (and me!) to start incorporating them.

  1. High in fiber – They have complex fibers that will feed your gut bacteria and ultimately, aid in digestion.
  2. Good source of nitrates – If you have narrow or constricting blood vessels, beets are here to help. They are knows to widen blood vessels.
  3. Vitamin A, Lutein and Zeatxanthin – They help protect the eye against glaucoma, macular degeneration and so much more.
  4. Help reduce fatty liver – They have betaine that help reduce fat in the liver.
  5. Good Source of trace minerals – It has copper and manganese which are very important trace minerals. They help in brain health and bone density.

Flavoring beet chips

The best way to flavor these beetroot chips (beetroot crisps for people on the other side of the pond, lol) is to butter them up!

I LOVE using different kinds of compound butters to flavor these homemade beet chips. My favorite has been lemon balm herb. Make Lemon balm butter and marinate the beets in it. The chips taste so unique and they will be very addictive.

Recently, I made scallion butter and it gave these beets a nice bite in favors. Don’t like butters? Use extra virgin olive oil or avocado oil.

Dill weed is the perfect compliment to beets. You can also use Tarragon to flavor them. Add the herbs to melted butter and let it set overnight in the refrigerator.

If your taste buds like a little kick, chili powder is a good way to spice up these beets.

Are beets allowed on keto?

This can be controversial topic but it’s not very simple. Just because they are a starchy vegetable, it doesn’t make them keto unfriendly.

  • They have a lot of fiber with cancels out some of the carbs
  • Beets are moderate glycemic index score. Their score is 64 which means they will not spike your blood sugars after consumption (Source: Livestrong, Consumer reports). As long as they are consumed whole (not juiced), they will not raise your sugar levels.
  • They help reduce oxidative stress, inflammation, cognition and so much more.
  • Beets are also a very good source of Vitamin C. Just one beet has about 4mg. There are so many different ways of enjoying fresh beets.

In my opinion, the many health benefits of beetroots far outweighs their starchy bad side.

🌿 Nutrtion tip: Beets have a lot of a lot of fiber that is good for the gut and can help reduce blood pressure.

How to use these chips

These beet chips are a crunchy snack that can be eaten right out of the air fryer. I like to dip them in my whipped feta dip. Or, they can also be added to a wonderful side dish.

I put it in my kale salad and oh boy! It makes kale taste so much better. I have also put it in my spinach salad and farro salad. For best results, make a large batch and use them in meal prep recipes.

Answering Common Questions

How to store beet chips

Beet chips can be put into glass airtight container and refrigerate. They are good for about 7 days when refrigerated. They can also be frozen in freezer friendly containers. When frozen this way, they will be good for one month.

Can I used beet from cans

Beets slices from cans are usually packed with preservatives. Make sure you wash them thoroughly. Also, dry them well before you season them with butter and dill.
Go the fresh route when making beet chips. Also, go with organic beets if you can find them.

Can I bake beets in the oven

Beets can be baked in the oven. The cooking process is the same until you mix all the seasoning. Then, place them on a baking sheet and put them into a 300°F preheated oven. It should take about 30 minutes to be baked perfectly. To prevent getting soggy chips, be sure to remove any excess liquid after washing the beets. The air fryer uses less oil.

Are these beet chips vegan?

This recipe is not vegan because I used Kerrygold’s grass fed, organic butter. The problem is that the vegan butters in the market are filled with processed ingredients and bad oils. They cause inflammation for me and for most people.

🌡 Substitution tip: Keep the air fryer temperature low because the chips will cook evenly. Higher temperatures will make the outside crispy and the inside will remain raw.

How to make beet chips in air fryer

  • Wash & dry 2 medium sized beets thoroughly because they are going to be very dirty. The amount of beets will depend on the size of your air fryer basket. Use a veggie brush if you have one. Dry them on paper towel to remove excess moisture.

  • If you don’t like to eat the skin, use a vegetable peeler to remove it. Use a (Affiliate Link) mandoline slicer or a sharp knife to slice beets. Don’t cut thick slices or very thin slices.

  • If they are too big, cut them into halves. You don’t have to have uniform slices.

  • In a large bowl, add melted 2 Tbsp butter, 1 tsp pink salt and 1 tsp dill weed. If you like it spicy, add a little black pepper or garlic powder.

  • Mix well using a plastic spatula.

  • Line your air fryer basket with parchment paper and place the buttered beets in it. Make a single layer only.

  • In the Air fryer the cooking time is 22 minutes at 300°F. Keep a close eye and don’t cook them at a higher temperature. My Air Fryer is (Affiliate Link) Cosori air fryer.

Remove them from the air fryer and let them cool to room temperature.

That’s all! You are now ready to enjoy these delicious air fryer beet chips. I made two test batches of these crispy chips. Once, I made with the golden beets and the other time, I made it with red beets. Choose the right beets for you.

Make ahead and storage

Get the beets with the tops because they have so much nutrition. For the tops, wash thoroughly and chop them up. In a pan, saute with butter and garlic. Serve as a side dish.

Make the compound butter the night before and let it set in the refrigerator overnight. Then, when you are ready to make the chips, melt the butter and marinate the beets in it.

The beet chips can be refrigerated for up to 6 weeks. You can also freeze them in freezer friendly containers. Personally, I don’t like the texture once I thaw them, so I don’t freeze them.

Ingredients
  

  • 2 beets Any color, medium size, tops removed and washed
  • 1.5 Tbsp grass red butter I used Kerrygold Organic Grass fed butter
  • 1/2 tsp pink salt
  • 2 tsp dill

Instructions
 

  • Mix well and refrigerate overnight, if you have the time.
  • Wash 2 medium sized beets thoroughly because they are going to be very dirty. Use a veggie brush if you have one.
  • Dry them completely before you chop them
  • Use a mandoline or a large knife to slice them.
  • If they are too big, cut them into halves.
  • In a bowl, add the beets and flavored butter (melted), salt, dill

  1. I was going to share this with a friend who Loves! beets but I decided against it. I’m upset you decided “most people” have a problem with the contents of vegan butter. That’s a lofty statement and it thoroughly turned me off. You could have just said, “Vegans can try vegan butter but I recommend using olive oil instead.” I wish you well, you are obviously very skilled and passionate about cooking.

    1. If you had done your research on vegan butter, you wouldn’t be so ignorant on it. Most of them use hydrogenated oil, canola oil, and so much more. I do my homework because I am Passionate about taking care of the human body. If something like this trips you from sharing, I am so glad you didn’t share it! Your narrow understanding of bad vegan foods vs. good vegan foods should stop with you, lol. Good luck in your journey in life.
