Miss eating potato chips on a keto and low carb diet?
I know I do.
Or, did! Thanks to these beet chips, I don’t have to miss out on eating chips and they happen to be a healthy snack.
Tips for making these air fryer chips
- Remove the beet tops first. Don’t throw them away because they are packed with nutrition. I like to saute the tops with butter and garlic.
- The good news is that the beet tops can be regrown too. This YouTube video shows how to grow them. Just make sure you purchase organic beets
- Keep the air fryer temperature low because the chips will cook evenly. Higher temperatures will make the outside crispy and the inside will remain raw.
- I prefer using dill weed to season these chips. That’s because it’s flavor is the perfect compliment to beets. You can also use Tarragon to flavor them or lemon balm. Using lemon balm butter can also be a good way to flavor these beet chips.
- If you have the time, make the flavored butter in advance. In a bowl, mix the melted butter, dill and salt. Refrigerate overnight before using it to flavor the beets.
- You can use a mandoline to slice the beets. If they are big, I have cut them into halves.
- The beet chips can be refrigerated for up to 6 weeks. You can also freeze them in freezer friendly containers. Personally, I don’t like the texture once I thaw them, so I don’t freeze them.
- I use the smaller beets to make the chips. I find that the big beets (AKA Bull’s Blood) are harder to work with and take more time to cook.
- These veggie chips can be eaten by themselves as a light lunch. Or, do what I did. I put them into a very simple warm kale salad
- This recipe is not vegan because I used Kerrygold’s grass fed, organic butter. The problem is that the vegan butters in the market are not vegan friendly. Did you know that there are at least 17 different types of beets??? I had no idea. The only beets I have used are red beets and yellow beets (AKA Golden Beets)!

Nutrition in beets
Beets are one of the most nutrition dense foods on the planet. If you don’t eat beets on the regular, here are good reasons for you (and me!) to start incorporating them.

- High in fiber – They have complex fibers that will feed your gut bacteria and ultimately, aid in digestion.
- Good source of nitrates – If you have narrow or constricting blood vessels, beets are here to help. They are knows to widen blood vessels.
- Vitamin A, Lutein and Zeatxanthin – They help protect the eye against glaucoma, macular degeneration and so much more.
- Help reduce fatty liver – They have betaine that help reduce fat in the liver.
- Good Source of trace minerals – It has copper and manganese which are very important trace minerals. They help in brain health and bone density.
Are beets allowed on keto?
This can be controversial topic but it’s not very simple. Just because they are a starchy vegetable, it doesn’t make them keto unfriendly.
- They have a lot of fiber with cancels out some of the carbs
- Beets are moderate glycemic index score. Their score is 64 which means they will not spike your blood sugars after consumption (Source: Livestrong, Consumer reports). As long as they are consumed whole (not juiced), they will not raise your sugar levels.
- They help reduce oxidative stress, inflammation, cognition and so much more.
- In my opinion, the benefits of beets FAR OUTWEIGH their “starchy” trait. All the nutrition in beets help your body function more efficiently. As long as you not eating several beets, it’s ok to enjoy them on keto.
How to use these chips
These beet chips can be eaten right out of the air fryer. But, put them into recipes to enhance their flavors:
Beet chips can be put into glass containers and refrigerated. They are good for about 7 days when refrigerated. They can also be frozen in freezer friendly containers. When frozen this way, they will be good for one month.
Beets slices from cans are usually packed with preservatives. Make sure you wash them thoroughly. Also, dry them well before you season them with butter and dill.
Go the fresh route when making beet chips. Also, go with organic beets if you can find them.
Beets can be baked in the oven. Simply follow the steps until you mix all the seasoning. Then, place them on a baking tray and put them into a 300°F preheated oven. It should take about 30 minutes to be baked perfectly.
Easy veggie chips
1. Kale Chips
Kale chips are so easy to make. I made them very early in my blogging career, so, you will have to look past the ugly pictures. But, the recipe is delicious! It’s a very easy snack and a great way to eat kale.
2. Buttered radishes
Turn radishes into chips because they taste heavenly! I buttered them with rosemary and then oven roasted them! They are the perfect topping for salads or eat by themselves.
3. Eggplant chips
Know someone who hates eggplants? They will turn into eggplant lovers after eating them. Old pics, but, healthy recipe!
Use compound butters to make beet chips or any veggie chips.
How to make beet chips in air fryer
- Wash & dry 2 medium sized beets thoroughly because they are going to be very dirty. Use a veggie brush if you have one.
- Use a mandoline or a large knife to slice them.
- If they are too big, cut them into halves.
- In a bowl, add melted 2 Tbsp butter, 1 tsp pink salt and 1 tsp dill weed.
- Mix well using a plastic spatula
- Line your air fryer basket with fryer safe paper and place the buttered beets in it. Make a single layer only
- Air fry for 22 minutes at 300°F
That’s all! You are now ready to enjoy these delicious air fryer beet chips. I made these beet chips twice. Once, I made with the golden beets and the other time, I made it with red beets. They were both equally delicious.

Ingredients

- 1.5 Tbsp grass red butter I used Kerrygold Organic Grass fed butter
- ½ tsp pink salt
- 2 tsp dill
Instructions
- Mix well and refrigerate overnight, if you have the time.

- Dry them completely before you chop them
- Use a mandoline or a large knife to slice them.

- Place the buttered beets on the wax paper. Make a single layer only
- Air fry for 22 minutes at 300°F
