A quick 5-ingredient vegan blueberry galette recipe is the perfect fruit galette to serve to your Thanksgiving guests. Using Puff Pastry and making it in the air fryer is the fastest way to make it.

I am a very poor baker as you may concluded from having very few dessert recipes on my blog.
So, I always look for shortcuts to get my dessert fix!
This galette is quick, easy and effortless! No dough required.
Tips for making this air fryer galette
- Thaw out puff pastry at room temperature. It won’t be as soggy when you are ready to use it.
- Canned blueberry sauce is fine for this recipe since I am using shortcuts to make the galette. However, if you want to make a sugar free version, try this recipe by The Foodie Affair. Homemade pie filling is always better than store bought.
- I have made this recipe with a cranberry pie filling as well and they both turned out good. I think I might make both for my Thanksgiving dessert.
- I prefer using (Affiliate Link) Wholesome Organic brown sugar in this recipe because the texture is more consistent. Also, the galette won’t get soggy.
- Baste the galette and the parchment paper with butter.
- It’s not necessary to line the air fryer basket with parchment paper or use a silicone base. I use it because it makes cleanup easier.
- Top the blueberry galette with lemon zest before serving because it tastes amazing!
- Serve this galette warm because it is more delicious that way. I let it cool for 2 minutes after it comes out of the air fryer.
- Make it à la mode! Trust me, it tastes amazing.
- Refrigerate leftovers but don’t freeze it. To reheat, place it in the air fryer for 5 minutes at 300°F (149°C)
- After you cut the puff pastry into a circle, you will have some leftover. You can use it for other recipes like vegan pot pie and raspberry danish.
“Crostata” or “Galette”
A crostata is Italian name for this dessert and a galette is a French name. Beyond that, there is no real difference between the two.
They are both free-form dessert tarts that don’t need a “cover”. Both can be made with any fruit or fruits. I think I am going to try a mixed berry galette next.
I couldn’t decide if I should call it a galette or crostata. But, since galette is more familiar to me, I decided to call it a blueberry galette.
Using puff pastry as the crust
I know there are people out there who are going to cringe because I used puff pastry.
I can hear them saying – “Puff pastry as a crust!! No Way!!”
For me, working with puff pastry is much easier. I love homemade pie crust, but, its too much hassle for me. Getting desserts ready in minutes with very little effort is my type of baking!
I am a big believer of cooking by your own style and not worrying about traditional techniques. So, use any crust you want. Even store bought crust is fine.
Puff pastry is great to make pinwheels with.
You can use the filling in an easy loaf cake too.
Making this blueberry galette in the air fryer
This galette was happily made in my Cosori Air Fryer Max XL 5.8 Qt! It’s definitely my favorite new kitchen gadget!
Dare I say, it has over-taken the #1 spot from my instant pot!
I just had to “air fry” it for 15 minutes. That’s it!
You can use the conventional oven to bake it also. Set it to 350° (176°C) and bake it for about 20 minutes.

How to make air fryer blueberry galette
- Thaw 1 sheet of puff pastry counter top for 1 hour
- Lightly flour a surface with all purpose flour or whole wheat pastry flour
- Place the puff pastry on that surface and open the folds. Remove all paper inserts.
- Lightly flour the top of the
- Use a rolling pin to gently roll out the puff pastry. Don’t make it too thin. I gently roll over the dough for about 1 minute only.
- Cut a circle shape out of the galette. I used a glass pan lid that was 8 and 1/2 inch in diameter. Set it aside
- In a bowl, add 1.5 cup of blueberry sauce (I used canned version).
- Add 1tsp of pumpkin spice seasoning and 2 Tbsp of brown sugar. Adjust the sugar level depending on the sweetness of your blueberry sauce. My canned version didn’t have too much sugar so I added 2 Tbsp to it.
- Mix well and pour the mixture in the middle of the circle cut puff pastry.
- Butter the edges of the crust
- Fold over the edges a small section at a time.
- Once folded over, baste the top edges with butter and being careful not to touch the blueberry pie filling.
- Lightly butter one side of a wax paper that is the size of your inner air fryer basket.
- Gently place the galette in the basket
- Put the basket in the air fryer and set it to 350° and cook for 15 minutes
- Once done, wait for it to cool down for 2 minutes before serving.

Equipment
- COSORI Air Fryer
- 8.5" daimeter pan lid to cut a circle in the puff pastry
Ingredients
For the blueberry pie filling
- 1.5 cup blueberry pie filling
- 1.5 tsp pumpkin pie spice
- 2 Tbsp dark brown sugar I use Wholesome Organic Dark Brown Sugar
For the crust
- 1 sheet puff pastry thawed counter top for an hour
- 2 Tbsp butter partially melted, vegan or regular butter
- flour for dusting
Garnish (optional)
- lemon zest for garnish
Instructions
For the pie filling
- In a bowl, mix the ingredients of the pie filling and set aside. See note #1
For the crust

- I use butter to baste the galette and to butter the wax paper. I use vegan butter for it, but, you can also use grass fed regular butter in it.
- It’s not necessary to line the air fryer basket with wax paper or use a silicone base. I use it because it makes cleanup easier. It’s a pain to clean the basket with stuck on puff pastry, trust me.
- Top the blueberry galette with lemon zest before serving because it tastes amazing!
- Serve this galette warm because it is more delicious that way. I let it cool for 2 minutes after it comes out of the air fryer. Then, I serve it immediately
