Pressure Cooker Red Lentil Soup is really easy to make. Dump all your leftover vegetables into it along with red lentils and pressure cook them for 20 minutes. It’s the easiest one-pot recipe to make and very little cleanup required.

All I have to do is dump all the ingredients into it and let the pressure cooker do all the work for me!
This time, I made a red lentil stew and it was so very very delicious!!
Tips for making this soup
- Red lentils are the only lentils that don’t need to be soaked overnight before cooking. They are very light weight, so, you can cook them without any preparation
- Use veggies you have in store or those that are in season.
- Fresh tomatoes are better for this red lentil soup, but you can also use canned tomato or tomato paste
- This soup is freezer friendly, so, you can use it over and over again.
Recipe inspiration
This recipe has been burning a hole in my SD Card for months. As a result of hurricane Irma, I lost power for about 12 hours. It was a tough experience to go through, but, my area was one of those that came out of it with not too much damage.
I was afraid that the veggies in the fridge might have gone bad, so, I made a few recipes with it immediately. Its hard to see good food go to waste, right?
I dumped all the veggies that could go bad and it was beyond delicious.

My first recipe with the pressure cooker was this Cuban Picadillo and ever since then, I have been in love with it. I can make so many different recipes with it and I would never run out of ideas.

Pressure Cooker Red Lentil Soup
Ingredients
- 1/2 cup Beet Juice See Notes
- 1 cup Carrots chopped
- 2 cup Butternut Squash cubed
- 2 cup Cauliflower Florets
- 1/2 cup Red Onions finely chopped
- 1/2 Red Bell Pepper chopped
- 1 cup Fire Roasted Tomatoes
- 1 sprig Parsley
- 2 tsp Salt
- 1 Tbsp Oregano
- 1 tsp Dried Basil or Rosemary
- 1 Tbsp Fajita Seasoning
- 1 Tbsp Nutritional Yeast
- 2 cup Red Lentils
- 1 tsp Cayenne Pepper optional
- 3 cup Water
- 1 Tbsp Lime Juice
Instructions
- Add all the ingredients into the pot of the pressure cooker except the lime juice)
- Close the lid of the pressure cooker and set it to the lock position
- Choose the manual option and cook for 20 minutes
- Turn off the machine when done and wait until its safe to open the pressure cooker
- Open the lid and add the lime juice
- Mix well and serve
