Every time I see a vegan or vegetarian version of coleslaw, it is always made with yogurt.  I don’t see anything wrong with it.  In fact, some of those coleslaw dishes are very delicious.

Having said that tiny disclosure, I always prefer eating coleslaw with mayo.  There is a timeless tradition of using eggs in mayonnaise and that makes it hard for vegetarians or vegans to consume it.

Over the years, I have tried many vegan mayonnaise recipes and some of them were even my creations.  None of those have ever come close to tasting delicious.

Then, I switched to silken tofu and decided to add cardamom.

The rest is history!

Well, my history anyway.

I will never go back to using yogurt in place of mayonnaise and I will never use another bad vegan mayonnaise recipe ever again.

Once you see how easy, delicious and healthy a vegan mayonnaise recipe is, I am sure you will also never look back.

The star of this recipe is definitely the cardamom seeds.  It provides a flavor to the vegan mayonnaise and it also provides a wonderful aroma to any dish that you prepare.

If cardamoms are not acceptable to your taste buds, don’t worry! There is a whole world of other ingredients you could add to give the vegan mayonnaise some flavor.

You can experiment with walnuts, pine nuts, raisins, kiwi, basil, mint…..

….. or you could think outside the box completely and go for CHOCOLATE!!!!!!!!!!!!!

Yes, I have actually made dark chocolate mayo and it was delicious.  I dipped carrot sticks in them and that was a fun snack to have.

You could also add sriracha sauce to this recipe and use it as a dipping sauce.  I have used sriracha vegan mayonnaise as a dipping sauce for my fried green tomatillos.  Also, this vegan mayonnaise makes a great potato salad

Preparation

  • In a food processor, add all the ingredients
  • Using the pulse setting on your processor, pulse about 7-10 times depending on your processor power
  • Check the consistency. If the vegan mayonnaise coats a spoon well then your mayonnaise is ready
  • The consistency of the mayonnaise should be the same as ketchup
  • Store in a glass bottle for best results
  • This mayo will be good for about 2 weeks, if refrigerated

Serve the vegan mayonnaise in coleslaw or using it as a dip for your vegetable snacks.

    1. I made this recipe and used in several ways – dressing, mayonnaise, coleslaw etc. In most recipes coming from the US I immediately omit ingredients with added sugar or it’s derivatives. I used unsweeened Dijon mustard instead. The recipe tasted really good without being sickly sweet (for my tastes). The cardamom was an inspired choice. I’ll definitely make it again. I also made it with Horseradish – tasted Ok but the original recipe is much better.
