How to make the cilantro sauce

  • In a blender, add the cilantro
  • Add the garlic
  • Add the coconut milk
  • Add the Taco seasoning
  • Finally, add the green enchilada sauce
  • Blend on high until its a sauce consistency

How to Cook Corn on the Cob in the Pressure Cooker

  • De-husk and remove all the silk from the corn
  • Place the corn in the steamer basket
  • Drizzle the corn with the cilantro sauce
  • Place a stand at the bottom of the pressure cooker
  • Pour 2 cups of water to the bottom of the pressure cooker container
  • Place the steamer basket on top of the stand
  • Close the lid and set pressure valve to sealed
  • Cook on high for 10-13 minutes
  • When done, release the pressure valve
  • Wait for 5 minutes before opening the pressure cooker
  • Serve the corn on the cob immediately

Notes

- Make sure you dehusk and remove all the silk from the corn on the cob.  The silk can damage the pressure cooker
- Top with lime juice before serving (optional)
