Remove the stems and thoroughly wash and dry the baby spinach
Place baby spinach in a salad bowl
Wash the cucumber thoroughly and julienne it
Wash cherry tomatoes, dry, cut into half. See notes
Julienne the red onion and add to the salad
Add the kalamata olives
Combine the ingredients for the dressing. Do this the day before, if possible
Add the bagel chips
Drizzle the salad dressing on the spinach salad
Mix well and serve immediately
Notes
- Do not peel cucumber's skin- If you have a few extra minutes, heat tomatoes on stove top for a few minutes before adding to the salad- If you are using feta cheese, use regular black olives instead of kalamata- Serve this salad immediately after assembling it** Nutrition Info is approximate
