These mini everything bagel breakfast burgers with a creamy blueberry sauce are super easy plant-based breakfast burgers to make. They are vegan friendly and packed with all the protein we need.

Instructions
Cooking the burger patties
Do not thaw the patties beforehand.
Place a skillet or stove-top grill on the oven and set it to medium heat.
After 30 seconds, add cooking spray to the pan.
Add 2 patties to the pan.After about 8 minutes, flip them. See Notes #1
Once they are cooked on both sides, set them aside.
Making the Blueberry Sauce
In a food processor, add the frozen blueberries, dairy free cream cheese, blackberry juice, and lemon extract.
Gently mix it up until it is sauce consistency.
Set aside.
Assembling the breakfast burger
Toast the mini everything bagel.
Let it cool to touch before spreading the blueberry sauce.
Add a lettuce leaf or greens of choice.
Top with onion slices.Top with one tomato slice.
Place one of the roasted patties on top of the tomatoes.
Repeat with another layer of the same ingredients.
Close the burger with the top of the bagel and serve!

Notes:#1 The packaging recommends 12 minutes on each side, but, I found that the patties will burn if kept that long.Tips
Do not thaw out the burger patties beforehand. They will become soggy and messy when you try to shallow fry them.
Similarly, do not thaw out the frozen blueberries for the sauce. You will have a very runny sauce that is hard to spread on the mini bagels.
While the patties are on the stove top, stand close by. I got distracted by my phone and had a burnt mess on my hand.
The blueberry sauce is not a sweet sauce, making it perfect for this breakfast burger. If you want to use it in a different recipe, add maple syrup for sweetness.
I like to make a double decker everything bagel breakfast burger. You can make it with just one layer.
