Place the feta cubes and olives in a glass jar, preferably with a latch lock
Add the Harrissa sauce and water to the glass jar
Gently mix the ingredients, making sure to not smoosh the feta. Marinate for 30min or overnight
Step 2: Assemble the salad
Place the chopped veggies, marinated feta and olive combo and fresh dill in a salad bowl
Add the salt, lemon juice and avocado juice to the bowl
Add a tsp of the feta marinated liquid to the salad
Mix well and serve this cold cucumber salad immediately.

NUTRITION INFO IS APPROXIMATE.TIPS:- Preferably, marinate the feta overnight, if possible. - If you can't find mini cucumbers, use regular cucumbers.- Spanish olives are best for this recipe, but you can also use kalamata.- Salt from the feta may be enough to flavor the salad, but, I prefer to add additional pink salad on top.- Fresh Rosemary can be substituted for fresh dill.- Organic Valley's Feta block is a vegetarian friendly cheese because they use plant enzymes. Unfortunately, it's not always easy to find this feta. So, when you see it in your local grocery store, buy a big batch of them.
