  • Preheat oven to 450 degrees and bake one sweet potato in the oven
  • In a pan, heat the oil on medium for 30 seconds
  • Add all the finely diced veggies
  • Add the dried oregano, dried parsley, dried basil, rosemary, salt and pepper
  • Mix well and cook the veggies until they are soft (7-9 minutes)
  • Let the veggies and the potato cool for a few minutes
  • Unwrap the sweet potato, remove skin and place the pulp in a large bowl
  • Add panko breadcrumbs and flax seed meal
  • Add the cooked veggies, lime juice and apple cider to the bowl
  • Add Mezzetta Italian Plum Tomato sauce and mix well
  • Make small balls out of the mixture (about 22-25)
  • Place the meatballs on an oiled baking tray
  • Bake the meatballs in the oven for about 10 minutes or until browned (oven temp - 450°)
  • Remove the meatballs from the oven and let them cool for a few minutes
  • Take a vegan hoagie roll and cut the top out. It should look like a kayak boat.
  • Add the Mezzetta marinara sauce in the hollow part of the hoagie
  • Put about 2-3 vegan meatballs in the hoagie
  • Top with more marinara sauce and bake for 2 more minutes
  • Serve this easy meatball sandwich immediately
