  • 1 Chinese bitter gourd finely diced
  • 1 Orange Bell Pepper finely diced
  • 1/4 Red onion finely diced
  • 1 sprig green onion finely diced
  • 1 clove garlic
  • 1 tsp cumin seeds (optional)
  • 1 squash
  • 6 button mushrooms cut lengthwise
  • 3 Thai Chili Or sub with 1 tsp of Sriracha Sauce
  • 3 tsp Soy Sauce
  • 2 cup Bow Tie Pasta
  • 3 tsp sunflower oil (or to taste)
  • 1 tsp sea salt (or to taste) for the stir fry


  • Cook the bow tie (farfalle) pasta
  • In a medium stir fry pan, add the oil and heat on medium heat
  • Add the cumin seeds and if using Thai Chilies, add them too
  • Add the grated garlic and allow to brown slightly
  • Add in the vegetables (except green onions) and salt.
  • Cook on medium heat
  • Cook the vegetables until they are tender
  • Add the Soy Sauce and Sriracha Sauce
  • Cook for two more minutes and the remove from heat.
  • Mix the pasta with the stir fry and top with the green onions.

Serve immediately.
