Box of LEAN CUISINE ® Spicy Mexican Black Beans and Rice

Mini tortillas or 1 large whole wheat tortilla
Olive oil for shallow frying
For the Yogurt Dressing
- 1 Cup of Vegan Yogurt or Vegetarian Yogurt
- 2 tsp of Honey Dijon Mustard
- ¼ cup of water
- 1 tsp of sea salt
- 1 tsp of dried basil
- 1 tsp of dried parsely
- 1 tsp of crushed black pepper
- 1 tsp of olive oil
- Lemon Zest
Instructions
Prepare the Tortilla
If you are using 1 large tortilla, use a cookie cutter to cut out circular shapes
You can also use an opened can of beans or garbanzo to cut the shapes. Basically, any medium sized canned vegetable will work.
Shallow fry the mini tortillas
To make the yogurt dressing
In a blender, add all the ingredients
Blend until all the ingredients have blended well
Assemble the Tostada
Remove the Lean Cuisine from its box. Place the plastic container in the microwave
Microwave on high for about five and a half minutes.
Remove from the microwave and let it sit for about a minute before removing the top film
Mix well with a spoon
Place the mini tortilla on a plate
Add the beans and rice on top of the tortilla
Top with the yogurt dressing
Serve immediately
