Tomato Granola Recipe
Tomato Granola Recipe made with organic granola and heirloom tomatoes with a light kombucha syrup
Oats and Honey Granola
preferably the dark purple which are not too firm
unsalted or lightly salted
For the Kombucha Syrup
I used Raspberry Chia Flavored
In a bowl, add the mint leaves and crush gently until well it's pulp
Add the Kombucha and agave
Mix well and set aside
In a cereal bowl, add the cottage cheese on one side and layer the tomatoes
Add the oat and honey granola on the other side
Drizzle the kombucha syrup over the bowl and serve immediately
Do not assemble the kombucha syrup until about 5 minutes before you use it. Kombucha is fermented and loses its power quickly when exposed to air.
If you take this tomato granola recipe to work, wait till you are ready to eat before you assemble the syrup.
