Take grilled corn and cut out the corn from the cob
Put the corn in a mixing bowl
Finely chop the cilantro and put it in the bowl
Roll the lime to bring out the juices of the lime
Cut the lime into halves and squeeze out the juice
Put the lime in the bowl with the other ingredients.
Add the salt, pepper and oil to the bowl
Mix well and let it sit for about 20 minutes
When ready to serve, mix well first

Make sure you grill the corn first. The smoky flavors of the grilled corn brings out the best flavors of the cilantro and lime.
Only use fresh lime juice because it doesn't have the artificial ingredients in it. It also tastes much, much better in this corn salad.
After assembling the recipe, let it sit for about 20 minutes to let the flavors infuse through every nook and cranny.
When ready to serve, give it one more stir.
You can refrigerate the leftover cilantro lime corn for about 5 days. It will not stay tasty beyond that. You may notice a slimy texture in the corn after a few days.
This cilantro lime corn should not be frozen. The cilantro just doesn't like being frozen. It will wilt and loose all its taste.
