Instructions
For the Rolls
Preheat oven to 400 degrees
In a large mixing bowl, combine the flour, baking powder, and salt.
Cut the applesauce slowly into the mixture. It will be rough in texture, but, that is perfectly fine
Refrigerate for about 15 minutes
Remove from the fridge and add the vinegar and sugar
Mix gently
Slowly add the almond milk while mixing
Knead into a dough without overworking it
Roll out the dough into a rectangle shape and 1/8" thickness
Cut the edges out with a pizza cutter
Brush the dough with the melted butter
Sprinkle the Cinnamon filling on top of the buttered dough
Cut into long pieces. In my method, I was able to make about 6 rolls
For the Apples (make while dough is in the fridge)
Mix the water, sugar and lemon juice in a saucepan
Bring it to a boil
Add the apples and Rose Syrup
Let it boil for about 2 minutes or until the apples are soft enough to bend
Remove from heat
Drain the apples and let them cool for about a minute
On a paper towel, spread the apple slices
Let them cool down
For the filling
Combine the cinnamon, sugar and nutmeg
Set aside
For the Icing
Combine all the ingredients and whisk gently
Set aside
Making the Rose shaped rolls
Take the first long piece of dough
Place a slice of apple lengthwise at the very edge of the roll
Place a second one just above the tip of the first apple
Continue until the long roll is filled on one side
Starting from the tip, roll the cinnamon roll. Be very gentle
Set aside
Repeat until all the rolls have been made into the rose shape
Take a baking tray and spray it with vegetable oil
Line each of the rolls in the baking tray
Bake for about 15-20 minutes or until the top of the apples start to brown
Remove from the oven
Top with the Icing or syrup
Garnish with Pistachio and cranberries and serve immediately.
