You haven’t lived until you have tasted an aromatic French potato salad! This best ever potato salad has lavender flavors using authentic organic lavender. Ready in 15 minutes because it’s made in the Instant Pot.
Once the lid is safe to open, open it and let the potatoes cool to touch.
Peel the skin of the potatoes.
Cut each potato into 8 pieces and transfer to a bowl.
Add the whisked seasoning and mix well.
If it looks dry, add 1 Tbsp of avocado oil.

** NUTRITION INFORMATION IS APPROXIMATE.- The Herbes de Provence can be sitting on the shelves for too long. This means that the lavender looses it's potency. So, I always add another ½ tsp of lavender petals to the seasoning mix.- The traditinal recipe calls for Dijon mustard but it's not vegan. So, I use Gulden's Spicy brown mustard instead and it's really good. - These potatoes can be boiled stove top. Add them to 6 cups for water in a pan. Put the potatoes in it and let it boil. Cook for 12-15 minutes until they are fork tender. Drain and let them cool to touch. Peel the skin and cup them into pieces. - Serve this salad immediately. It doesn't store well. Leftovers can be refrigerated for about 2 days only.
