In a large glass bowl, add all the ingredients in order listed
Mix well
Cover with plastic wrap or shower cap
For best results, refrigerate for 30mins to Overnight for marination
Serve with pita chips or by itself

- To get 1 cup of cooked amaranth, place ½ cup of dry amaranth in 1 and ¾ cups of water. Cover and cook for 20 minutes on medium heat. Cook until all the water has been absorbed. Let it cool before adding to the glass bowl
