Ingredients

Instructions

  • In a pan, add the olive oil. Alternatively, you can put all the ingredients into a slow cooker.
  • Add  cumin seeds and heat for 20 seconds
  • Add onions and garlic.  Saute for about 30 seconds
  • Add baby carrots, frozen spinach and salt.  Stir
  • Add Chick peas, orzo and tomato sauce. Cook for about a minute
  • Add water and mix well. Lower the heat to medium-low
  • Add mint (if using) dried basil, dried oregano and dried parsley
  • Add salt, cayenne pepper and ground pepper
  • Simmer for 1 hour or until the orzo have doubled in size, stirring often
  • Remove from heat and add lime juice
  • Serve immediately
