You won’t believe HOW EASY it is to cook potato nibbles in air fryer. These tiny potatoes with garlic butter are the best Thanksgiving side dish for any dinner.

These bite-size potatoes use basic ingredients, are easy to cook, take well to butter, and practically melt in my mouth!
And, I can’t eat just one!!

Tips for making them
- Make sure you wash and thoroughly dry them before you cook them. Even though they are triple-washed, they come in a hole-filled bag. It’s possible that the potatoes came in contact with bad stuff.
- Marinate the butter in the herbs (rosemary or lemon balm), garlic, and lemon pepper for at least 30 minutes or overnight. It will give these potatoes a great taste.
- Store leftovers in a glass container and refrigerate for about a week. Not that there will be leftovers, but, just in case….
- These potato nibbles don’t freeze well, so don’t even try.
- I like to cook them whole because they taste much better that way. It keeps them crispier.
- If you can put your air fryer outside or near an open window, do that. The room gets warm when the air fryer is on.
- Preferably, use grass-fed butter. However, you can also vegan butter, if you don’t eat dairy. Check out my ode to butter. They were delicious both ways. I also got to use my new favorite lemon balm butter in this recipe.
- Cooking times will depend on your Air Fryer. My Air Fryer is (Affiliate Link) COSORI Air Fryer Max XL, 5.8Qt.
Why not use an air-fryer safe container instead?

These small potatoes didn’t turn out as crispy as when using a parchment paper.
So, experiment with both and tell me which one you prefer. Or, if you know of a different container that would work, feel free to comment below.
Parchment paper comes in very handy when cooking recipes in the Air Fryer. You don’t want to know the mess that happened the first time I cooked my tempeh in it without using parchment paper.
Keep the skin on!
I know I have said this many, MANY times in the past!
Always keep the skin on!
Just like with cooking purple sweet potatoes, wedges, and cilantro pesto potatoes, the skin makes ALL the difference. I have seen people like Katy Kicker who make air fryer diced potatoes and leave the skin on. It tastes good either way.
Since they have a thin skin, these potatoes are crispy on the outside and fluffy on the inside!

The only recipe where it’s ok to remove the skin is a candied sweet potato recipe.

Besides, each Tasteful Selections Nibble packet comes with 60 potatoes. If you have 10 guests coming for Thanksgiving dinner and each will eat about 15 nibbles….
….you will have to peel 150 tiny potatoes!!!

No, baby potatoes are bigger than potato nibbles. It can be confusing because there are so many kinds of mini potatoes. Just remember that nibbles are just a little bigger than grapes.
Yes, you can use a small amount of oil (avocado or olive oil instead of butter. However, the taste and texture will not match the butter’s texture. Butter makes the flavors pop in this recipe.
Yes, you can cook them in a skillet. Add about 2 tsp of butter more butter than what the recipe calls for. Ideally, you want to boil the nibbles first and then pan-fry them. Try them in the slow cooker and let me know how they turn out. I don’t recommend microwaving them.
🔨 Smash them
These nibbles taste so good when smashed!
Cook them just like I show you in the recipe below.
Then, to smash them:
- Remove the air fryer basket. Be careful since it’s still hot.
- Use the bottom of a ramekin and gently press down on the nibbles
- Place the basket back in the air fryer
- Cook them for 8 minutes at 250°
- Top them with vegan sour cream or your favorite toppings and DEVOUR them.
I have used baby potatoes to make smashed potatoes recipe. Instead of the air fryer, I roast them in the oven.

How to cook potato nibbles in the air fryer
Equipment
- COSORI Air Fryer
Ingredients
For the butter
- 4 Tbsp vegan butter 1/2 stick, vegan or vegetarian butter
- 2 cloves garlic peeled grated. Adjust to taste
- 8 leaves lemon balm use medium to small size leaves
- 10 leaves mix of fresh herbs
- ½ tsp lemon pepper
- ½ tsp salt optional. If using, use pink salt.
For the potatoes
- 16 oz Tasteful Selections Nibbles Honey Gold® washed and dried
Instructions
- Mix all the ingredients of the butter and set aside for 30 min to overnight
- Place the potato nibbles in a bowl
- Add the butter mixture and mix well
- Line the air fryer basket with parchment paper (See note #1)
- Gently transfer the buttered nibble potatoes to the lined basket
- Put the basket in the air fryer and set it to 350° for 26 minutes.
- After 20 minutes, remove the basket and carefully shuffle the potatoes. (See note #2)
- Return the basket and cook for the remaining 6 minutes
- Remove the potatoes from the basket and serve immediately.

I’m excited to try this recipe! There used to be a food cart that I frequented that had potatoes exactly like this that was served with sriracha Mayo, furikake ( Japanese rice seasoning) and bacon on top, it sounds weird but it is delicious! I’m excited to recreate it at home!
