- You can refrigerate the leftover cilantro lime corn for about 5 days. It will not stay tasty beyond that. You may notice a slimy texture in the corn after a few days.
- This cilantro lime corn should not be frozen. The cilantro doesn’t like being frozen. It will wilt and lose all its taste.

This recipe is one of those recipes where cilantro is a MUST ingredient. Sadly, there is just no way around it. I wish you could sub it with parsley or rosemary or thyme! It just won’t be the same.

Ingredients for this corn salad
- 4 grilled corn on the cob (about 3 cups)
- 1/2 a bunch of cilantro (about 1 cup when finely chopped)
- 1 whole lime
- 1.5 tsp pink salt
- 1 tsp black pepper (optional)
- 2 Tbsp extra virgin olive oil (optional)
