Are you one of those people for whom cilantro tastes likes soap? My heart truly goes out to you.

This recipe is one of those recipes where cilantro is a MUST ingredient. Sadly, there is just no way around it. I wish you could sub it with parsley or rosemary or thyme! It just won’t be the same.

But, if you are like me and you love cilantro, this recipe is going to hit all the right spots! The aroma, the flavors, the textures of corn are amplified in this recipe.

Use cilantro that is a deep green because it will be fresh! Wilted or yellowing leaves on the cilantro will not have the right punch in flavor.

Ingredients for this corn salad

  • 4 grilled corn on the cob (about 3 cups)
  • 1/2 a bunch of cilantro (about 1 cup when finely chopped)
  • 1 whole lime
  • 1.5 tsp pink salt
  • 1 tsp black pepper (optional)
  • 2 Tbsp extra virgin olive oil (optional)

Use this corn salad as a dip at your parties. I like to serve my with tortilla chips or top it on chili tacos! How about you?
