Mediterranean Recipes

What’s a good Mediterranean dish?  One that has lots of fresh veggies and it’s made with simple spices.  Mediterranean recipes is one of my favorite cuisine.

I love seeing a giant plate filled with all kinds of grilled veggies like bell peppers, broccoli, cauliflower, peas, eggplant, carrots, asparagus, healthy grains and so much more.  That is a sight worth drooling over.

Mediterranean diet puts a lot of emphasis on healthy fats, fresh ingredients, good cheeses, legumes, lentils and lots of home cooking.  I have tried to incorporate those rituals into my Mediterranean recipes.  There is very little processed ingredients, if any, in these recipes.

My favorite food do include some dairy like feta cheese and sheep cheese.  But, I also have recipes for those non-dairy Mediterranean recipes.  This is a food category where everyone can get something they will like.

Even meat eaters will love the vegetables, lentils and cheeses in these recipes.  The recipes are hearty and easy to make.  No one will complain when eating these simple recipes.

In Mediterranean diets, there is also a lot of emphasis on good proteins.  I have included healthy sources of protein like lentils, cottage cheese, Greek yogurt, quinoa and beans.  They can be included in all your daily meal plan.

Many of these recipes can be made ahead and put into meal prep recipes.  This way, you have no excuses for not eating right!  Sometimes, I make the recipes on Sunday night and keep it refrigerated in single serve meal prep containers.  Then, I just pull out one container a day for lunch or dinner.  It has completely cut down on my junk food eating.  Not to mention, I get a good dose of protein and nutrition from these recipes.
